Ingredients

1 cup of oat flour (you can make your own by blending rolled oats)
1 scoop of your favorite protein powder (I suggest Levels whey or Promix vegan!)
1 teaspoon of baking powder
1 tablespoon of maple syrup, date syrup, or sweetener of choice
1/2 cup of plant-based milk (almond, soy, or oat)
Cooking spray or coconut oil for greasing the pan
Optional toppings: fresh berries, sliced bananas, nut butter, or maple syrup

Instructions

Combine the oat flour, protein powder, and baking powder in a mixing bowl. Mix well to ensure the ingredients are evenly distributed.
Add the maple syrup and plant-based milk to the dry ingredients. Stir until a smooth batter forms. If the batter is too thick, add more milk to reach your desired consistency.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or coconut oil.
Once the skillet is hot, use a small spoon or squeeze bottle to pour small circles of batter onto the skillet, forming mini pancakes. Cook for 1-2 minutes or until bubbles start forming on the pancake’s surface.
Carefully flip the pancakes using a spatula and cook for 1-2 minutes or until golden brown and cooked through.
Transfer the cooked pancakes to a bowl or plate, and repeat the process until all the batter has been used.
Serve your Protein Pancake Cereal hot, topped with your favorite toppings such as fresh berries, sliced bananas, nut butter, or a drizzle of maple syrup.

Protein Pancake Cereal offers a fun and nutritious twist on traditional breakfast fare. Its high protein content and customizable toppings make it the perfect way to start your day on a delicious note. Whether you’re fueling up for a busy day ahead or simply looking to satisfy your morning cravings, this trendy breakfast option will surely become a new favorite.
